The Other Pigs in a Blanket

So, I saw a pin a while back and have been looking forward to trying it. Pancakes with a slice of bacon inside them. Awesome right?! Here’s how I did it:

Regular ole’ Bisquick following the directions. I always add a bit of vanilla extract to the batter.

Crispy, cooked bacon. I used turkey bacon.

Note: I made way too much bacon. I made enough batter for 14 pancakes (which is normally like 8 if you are me, since I like big, fluffy pancakes). And I crispy-ed up 12 slices of bacon. In reality, I only made 5 pancakes. And they were huge.

On my hot griddle, I poured a thin line of batter. Then I added a piece of bacon on top.

Then I added more batter on top. (I told you, I’m really good at all this complicated cooking stuff :))

That’s right, there’s bacon under there.

Now, the worry came when I realized I had to flip that bad boy over. But I think the bacon stabilized it and it was actually easier than flipping a regular pancake. Tip: Many moons ago, my mom told me that the key to good pancakes is patience. You gotta wait until the edges bubble before you flip. Perfect pancakes every time.

Ain’t it cute?! Truth is, it really wasn’t as awesome as I wanted it to be. I think I built it up in my head and it just didn’t deliver. I imagined dipping them into my bowl of syrup, but it just made a mess. Don’t expect to dip them if you make them. Just use a fork.

Luckily, I made some genuine Alabama fried taters, too. It was a good breakfast for dinner night in my book.

Baked Strawberries

My first cooking post. Ahh. I’m not really a cook, at all. But I do have to eat, and I do like my food to taste good. In my efforts to add more vegetables in my life, I’ve been eating a lot of salads at home. I’ve been on a quest to find my perfect salad. So, my friend Tad told me of a salad recipe from Williams-Sonoma and I just had to try it. Well, part of it. Baked strawberries, y’all. What?! You can cook fruit?!

Ingredients:

1 lb. strawberries, halved

2 tsp. sugar

1 Tbs. extra virgin olive oil

Salt & Pepper, a few grinds each

Coat strawberries in olive oil. Add sugar, salt, and pepper and mix until evenly coated. Bake at 400 degrees for about 10 minutes.

They were so good! They begged to be eaten with some champagne. I see them in/on some kind of dessert in the future. And I want that juice for a salad dressing.

To finish off my spinach salad I added half an avocado, two celery stalks, a carrot, a few mushrooms, some shredded cheese, a few bits of bacon, and strawberry vinaigrette. And the leftover strawberries, well, let’s just say they didn’t last the night.

This past Saturday while walking from place to place downtown, I found some sad, discarded birthday balloons. So I took them with me to each place we went and it just happened to be someone’s birthday. It was super fun. And I had a Sex & The City moment with the balloons in the air while walking downtown. That was even more fun!

I’m pretty sure this outfit was super cheap. Yes, I shop at Wal-Mart and K-Mart and yes, I look damn good. Not to sound narcissistic, but I do not think that you have to buy expensive things to look good. I like things that look unique and different, no matter if it is from a thrift store, a boutique, or a superstore. So buy what you like, but never buy it full price.

When I got this sweater I knew I had to wear it the next time I went to visit my Mom. Because the perfectly matching jewelry belongs to her. Sad face. I’ve worn the sweater again since then and it just feels wrong to separate them. I tried to give my Mom the sweater, but no luck. I’ll just be on the lookout for different daisy accessories. And this is the first post with my new glasses. I love the lace-like detail.

And my Mom’s dog, Sooner, was feeling a little left out so I had to get a shot of her too. Isn’t she precious?!

Well, I’m back from being under the weather! I had an allergic reaction to who knows what (me thinks it is dairy related). A trip to the ER, a few shots in the rear, and a bottle of dye-free benadryl and I feel like a real person again. However, I feel the need to dip grilled cheeses in ranch dressing and then wash it down with some buttermilk. Just kidding, that’s disgusting, but I’m sad that I can’t. Any one else have an adult onset allergy tale?
